Sicilian Fruit Salad (Macedonia Siciliana)

Recreating the flavor of the ancient Sicilian gelato specialty, this product is based on diced candied fruit, including orange, citron, melon, cherries, and apricots. To make Macedonia Siciliana flavored gelato, use a white base mix and add the Macedonia Siciliana paste to it. After adding the paste to the base mix, it is best to filter it and use part of the fruit cubes as a layered ice cream filling. This product is particularly interesting for fillings of many gelato and pastry specialties, such as cakes, meringue, spumoni, and zuccotti. It can also be used as a garnish for semifreddi and gelato.
