Combined Lemon Paste (Limone Pasta Combinata)

Limone Pasta Combinata is a paste product designed to regulate the degree of acidity in gelato.

Uses:

• For a more intense juice flavor, it is recommended to replace a portion of the water with fresh lemon juice (e.g., 50-100 g/L).
• In the case of hot processing, use the pasteurizer on the Low Pasteurization cycle at 65°C.
• For a better yield with cold processing, it is recommended to allow the mixture to mature for at least 30 minutes.
